Moon Cake Recipe: Mung Bean Pastry with Salted Yolk / Minced Pork

Speaking of moon cakes, egg yolk pastry is probably the most famous one. However, do you know there is another kind of moon cake that is as popular as egg yolk pastry, and even called “the Taiwanese moon cake”? It is the MUNG BEAN PASTRY, a pastry with rich green mung bean paste and flavorful shredded pork bits or salted egg yolk. Comparing to other traditional moon cakes, mung bean pastry is relatively lower in fat and sugar. Therefore, mung bean pastry gradually becomes the mainstream taste of Taiwanese mooncakes in this era where more and more attention is paid to healthy eating. Ingredients

(6 mung bean pastry with salted egg yolk filling & 6 mung bean pastry with minced pork filling)

  1. Green Mung Bean Paste
  • Green Mung Bean – 200g
  • Sugar – 200g
  • Oil – 40g
  • Water – 400g
  1. Minced Pork Filling and Salted Egg Yolk Filling
  • Ground Pork – 150g
  • 2 Shallots
  • Soy Sauce – A Tablespoon
  • Rice Cooking Wine – A Tablespoon
  • Sugar – 3 Teaspoons
  • White Pepper – A Little
  • 8 Salted Egg Yolks
  • Rice Cooking Wine – A Little (for soaking salted egg yolk)
  1. Pastry
  • Clarified Butter – 60g (water dough) + 80g (oil dough)
  • All Purpose Flour – 160g (water dough)
  • Powdered Sugar – 20g (water dough)
  • Water – 90g (water dough)
  • Cake Flour – 160g (oil dough)
  • Soy Bean Flour – A Little (for decoration)
  • Red Food Coloring – A Little (for decoration)

Mung Bean Pastry Making Process

STEP 1: Making Green Mung Bean Paste

Soak the peeled mung bean kernels in twice the amount of water for two hours, and steam them in an electric cooking pot (1 cup of water in the outer pot). The steamed mung bean kernels will become soft and mushy. At this time, put steamed mung beans, sugar and oil together in a pan and fry over medium-to-low heat. It might seem very wet at the beginning when the sugar is melting. You don’t have to worry. Just keep stirring until it does not flow anymore. This is the green mung bean paste filling we need (it takes 15-20 mins)!

STEP 2: Making Minced Pork Filling

Slice the shallots into thin circles and slowly stir-fry them over low heat until they turn golden brown. Scoop up the fried shallot and set aside. Then put the ground pork in the pan and stir-fry with the remaining oil. When the ground meat is cooked, add soy sauce, rice cooking wine, sugar and white pepper to season. Finally, add the fried shallot that was set aside and continue to fry until the sauce is absorbed.

STEP 3: Making Salted Egg Yolk Filling

Soak the cooked salted egg yolk in rice cooking wine (or spray a layer of rice cooking wine on the surface). Put the egg yolks in the oven and bake for 5 to 8 minutes until they are bubbling and the aroma comes out. Crush the egg yolk with a fork or a food processor.

STEP 4: Wrap Salted Egg Yolk / Minced Pork With Mung Bean Paste

Divide the mung bean paste into 12 equal portions (about 50g per portion) and knead each portion into a ball. Divide the shredded salted egg yolk into 6 equal portions, and also knead them into small balls. Flatten a mung bean ball and wrap a portion of salted egg yolk into it.

The same for the braised pork filling. Pack about 15g of minced pork in the mung bean paste and knead it into a ball.

STEP 5: Making Water Dough

Mix the all purpose flour, clarified butter (refrigerate into a cube and cut into small pieces), powdered sugar, and water to form a dough. Keep stirring and kneading the dough until it turns into a smooth ball. The dough will not stick to the bowl or hands at this time. Then let the dough rise for 30 minutes.

STEP 6: Making Oil Dough

Cut the clarified butter into small pieces, and mix the cake flour with them.

STEP 7: Assemble Water Dough And Oil Dough (1)

Divide the water dough and the oil dough into 12 equal portions. Flatten a water dough and wrap a oil dough into it. Let the mixed dough rest for 10 minutes.

STEP 8: Assemble Water Dough And Oil Dough (2)

Flatten the dough with your palm, and gently roll it out into an oval shape. Then roll it up from the bottom to the top. Let the rolled dough rest for 15 minutes. Roll the rolled dough out into an oval shape again, and roll it up into a snail shape.

STEP 9: Wrap The Filling With The Dough

Use your finger to press the middle of the rolled dough, let the spiral ends move toward the center. Use your palm to press the dough, then roll it out into a flat circle which is slightly larger than the filling ball we made in step 4. Put a filling ball in the middle of a flatten dough and wrap it up.

STEP 10: Decorate The Mung Bean Pastries

Preheat the oven at 340F (170C). Scatter a little soy bean flour on those mung bean pastries with salted egg yolk filling. Lightly press other minced pork mung bean pastries, and use chopsticks to dip red food coloring dots on the top of them.

STEP 11: Bake The Mung Bean Pastries

Bake the pastries in the oven for 25 to 30 minutes, and enjoy your homemade moon cakes!

If you haven’t tried this marriage of sweet and salty, you should really give it a try. The salted egg yolk wrapped in the mung bean pastry is like the huge and round moon on the Mid-Autumn Festival. The mung bean pastry with minced pork filling is even more distinctive, the salty aroma of the braised pork subtly neutralizes the sweetness of the mung bean paste. This is the classic Taiwanese moon cake!
